Los Cabos high season runs November through April — dry, warm, and the months when whale sightings are part of the view from a cliffside table. The demand peaks are Christmas and New Year, the Presidents’ Day long weekend, March spring break, and Easter.
For 2027 those land as follows: Presidents’ Day 13–15 February, spring break through the first three weeks of March, Easter Sunday 28 March with Good Friday on the 26th, Passover 21–29 April, and Memorial Day 29–31 May closing the season. Easter is early in 2027, which pushes it hard against the end of spring break and makes late March the densest stretch of the year for a dinner reservation.
How far ahead to book, by tier

Farm-to-table
The part of Los Cabos dining that surprises first-time visitors: an agricultural interior twenty minutes from the coast, and three restaurants built on it.
The farm-to-table landmark of the region, and the one to book if you only do this once. Worth planning a whole afternoon around rather than treating as a dinner stop.
Jungle-cool rather than pastoral, with craft cocktails that justify arriving before you are hungry. The most atmospheric of the three after dark.
A historic farm setting, and the most complete sense of the interior. The quietest of the three, which for some guests is the recommendation.
Sushi and Nikkei
The canon, executed as expected, and reliable for pristine fish. Book it when the group wants a certainty rather than a discovery.
Baja-accented classics, and the more interesting of the two if you have had Nobu in three other cities. Equally reliable on the fish.
