What “Fully Staffed” Means in Anguilla in December: A Week at a West End Estate

Anguilla in December

Anguilla in December is two different months. From the first of the month to about the 18th the island is dry, warm and nearly empty. The beaches at Barnes Bay and Rendezvous Bay have the staff and the sand and nobody else, and the estates take seven nights at their winter terms. From the 20th the festive fortnight begins, the minimums hold firm, and the same houses are full of the same families they had the year before. We place guests in both halves. Here is the first, lived at one house, so that “fully staffed” stops being a phrase and becomes a week.

Our house for it is Cerulean on Barnes Bay, in the West End. Nine bedrooms on two private beachfront acres, a staff of eighteen by its listing, including three chefs, three butlers, a manager, a concierge, a gardener and security around the clock. A fifty-foot infinity pool, a tennis court, a gym and a spa room. Its listing holds a seven-night minimum from November 1 to December 14, with the festive terms on request. What follows is the week as the manager runs it.

Saturday: the boat from St Maarten, and the first person you meet

Anguilla is reached through St Maarten, and in December the afternoon flights from the north-east land between three and five. Cerulean’s package includes the airport and sea port transfers. So the first member of the staff a family meets is the driver on the French side, who takes the group to the private boat for the crossing to Blowing Point. Twenty minutes on the water. Flat, most days in December. At the pier the manager is waiting with the immigration forms already filled from the passport copies we sent a week before, and the estate is ten minutes by car.

By the time the cars pull in, the first chef has the welcome dinner on the terrace and the butlers have unpacked nothing, because unpacking is offered, not imposed. Housekeeping has turned the rooms by the ages on the booking. Cribs in the room nearest the parents, twin beds made up for the two cousins, the master with the sea on three sides. Dinner at seven, because the children have been travelling since dawn. Nobody is asked what they want. A chef asked us in November.

Sunday: the day the staff learn the family

On the first full day the manager reads the group. Breakfast is served from seven to ten on the terrace, which is how the manager learns who is up at seven and who at ten. By lunch the chefs know who eats fish and who does not, which child wants pasta every day, and whether the grandfather takes his coffee before or after his swim. Nothing is written down in front of the family. All of it is written down. Later.

Sunday on Anguilla in December is quiet in the villages, and we tell families to spend it on the estate’s own sand. Three butlers rotate so that one is always on the beach with the loungers, the water and the umbrellas, one at the pool and one in the house. Tennis is played before eleven, when the sun is still low. In the afternoon the manager sits with whoever is making the decisions and lays out the week. The boat on Tuesday, the beach dinner on Thursday, the spa treatments by day, the one restaurant evening if the family wants one. Fifteen minutes. Then it is set. For the week.

Monday and Tuesday: the kitchen’s rhythm, and the boat to the cays

With three chefs on the staff, the kitchen runs in shifts rather than in a hurry. One chef does breakfast and the morning shop, the second lunch and the afternoon’s preparation, the third dinner. In the gap between lunch and six the kitchen is as quiet as the rest of the house. Groceries are five minutes by car and the provisioning is done daily rather than once, which is why the fish is the morning’s fish. On Sunday the family tells the chef what they want to eat again. On Monday the chef tells the family what the boats brought in.

Tuesday is the boat. From Barnes Bay a private boat takes the group out to the cays off the island, Prickly Pear and Sandy Island among them, for a morning of snorkelling. Lunch is on the sand, packed by the chef and served by the butler. Every family takes this one outing, and the manager books it on the Sunday for the calmest day the forecast shows. Anguilla in December gives most weeks four or five of those days. By three the children are back in the pool.

Wednesday: the invisible day

Wednesday is the day guests notice the housekeeping, because they notice they have not noticed it. Rooms are done while the family is at breakfast, turned down while the family is at dinner, and the laundry goes out in the morning and comes back by five. Before nine the gardener works the far side of the property. Security is a car at the gate and a man on the beach at night whom the family meets once, on the Saturday, and does not see again unless they look. Spa treatments are booked for the afternoon, the therapist arriving from the village, and the manager has moved lunch to one so they start at two.

What makes an estate fully staffed is not the number eighteen. On Wednesday afternoon nobody in the family can say where any of them are, and that is the definition. Our note on what a fully staffed villa actually includes sets out the checklist in general terms; this is what the checklist looks like at one house in one week.

Thursday: the beach dinner, which is the night the week is for

Thursday evening the butlers carry the long table onto the sand at Barnes Bay at five, while the light is still on the water, and the three chefs cook together for the only time in the week. Grilled lobster if the boats had it, the children’s pasta first at six, the adults at seven with the sun going into the sea behind the table. Lanterns light the path, the gardener’s work. Sweaters are the one thing the manager has to remind the family about, and the one thing anyone forgets. In early December the beach is theirs; in the festive fortnight the same dinner happens, and the neighbours’ lanterns are visible along the bay.

When the family calls us the following October, this is the dinner they describe. Which is why we put the boat on Tuesday and the beach dinner on Thursday rather than the other way round. The boat day is tiring. The dinner wants the family rested.

What the staff do not do, which matters as much

Three things an estate staff will not do, and we say so before the week. They will not watch children in the pool; a nanny is booked separately, through the manager, and in December she is easy to find, in the festive fortnight less so. They will not drive the family’s hire car, because the driver is the driver.

And they will not cook for a party the family has invited without a day’s notice, because the shop is daily and the boats are the boats. Most families never test any of the three. One did, in 2024, with a lunch for twenty-four announced at ten in the morning, and the chefs managed it. They asked us afterwards to put the day’s notice in writing, and it is in every contract since.

Friday and Saturday: the restaurant evening, if any, and the quiet departure

Most families at Cerulean eat in all week, and the listing’s note that the nearest restaurants are two minutes away is used, in our experience, once at most. If the family wants a restaurant, Friday is the night, and the manager books it on the Sunday. The driver takes the group and brings them back, and the chef has left a cold table for the ones who come home hungry.

Saturday morning is the departure, the reverse of the arrival: the cars at nine, the boat at ten, the French side by half past, the flight at one. Butlers pack for anyone who asks. On Friday evening the manager has the bill ready, with the extras itemised, because nobody wants to read a bill on a boat.

What the December terms are, and why the first fortnight is the week to take

Cerulean’s listing holds seven nights from November 1 to December 14 and the festive period on request. On Meads Bay, The Beach House, which we hold for families who want the restaurant beach instead, takes four nights in late November and mid-December and seven from December 20 to January 3. Villa Alkera on Shoal Bay shows no December minimum on its listing and makes the festive bookings non-refundable, which in practice means a week. So the first fortnight of Anguilla in December is the one window in the winter when an estate takes a shorter stay at its winter terms, with the full staff on. Families who can travel before the schools close should take it.

Weather is the same in both halves of the month: low eighties by day and dry, the trade wind steadier on the north-east coast than in the West End, hurricane season a month behind. What differs is the island. In the first fortnight the beaches at Barnes Bay and Rendezvous Bay belong to the houses on them. From the 20th they belong to everyone who has booked a year ahead. Our Anguilla villas page lists all thirteen houses we represent on the island. Our fully staffed villas collection gathers the ones, here and elsewhere, where the brigade is part of the rate. And the best beaches in Anguilla guide puts Barnes Bay among the quiet ones for a reason.

Questions guests ask us about the December week

Is Anguilla in December warm and dry? Yes, in the low eighties by day with the trade wind, dry most years, and hurricane season a month behind. Anguilla in December is quiet in the first fortnight; from the 20th the festive fortnight fills the island.

What does a staff of eighteen actually do? At Cerulean, by its listing: three chefs in shifts, three butlers rotating between beach, pool and house, a manager, a concierge, a gardener, housekeeping and security around the clock. A family meets most of them once and the manager every day.

Is the boat to the cays included? Arranged by the manager and billed as an extra at every house we represent. The chef’s packed lunch and the butler who serves it come from the house.

What is the minimum stay for a December week in Anguilla? Seven nights at Cerulean from November 1 to December 14 by its listing, four at The Beach House in late November and mid-December, and seven everywhere from December 20.
