Corfu. The quiet answer, and the one we find ourselves recommending most to families. The northeast coast estates — the stretch locals still call Kensington-on-Sea — hold the largest houses of the three islands and the widest late availability. Villa Ultima at Nissaki is the reference point among Greek villas at this scale: a thousand square metres for twelve guests, two pools, a private dock, hammam and spa, fully staffed with chef, house manager and daily driver included. The 72-hour box: how a late booking on luxury Greek villas actually runs

Late availability behaves differently from planned booking, and the difference is almost entirely about speed. Here is what actually has to happen, in order, once you decide to move.
