There is a version of Ibiza that begins in the second week of September, when the flights thin out, the coast road empties, and the sea is warmer than it was in June. It is not the island most people book, and it is the one our returning guests ask for by name. What follows is a single day at a villa in Es Cubells — hour by hour, with the staff who make each hour happen — because the difference between this Ibiza and the one on the posters is not the house. But the roads are quiet, a table can be had at short notice, and the villas that were committed a year ahead for August are suddenly open . You are buying the same island with the friction removed.
By late September the season is visibly winding down and some seasonal businesses begin to close for the winter. If your week is built around one specific beach club or restaurant, confirm it is still open on your dates before you commit — that is a question for the concierge team rather than an assumption.
A September day at an Es Cubells villa
One day, as it actually runs. The times are indicative; the staffing is not — everything below is arranged before you arrive, which is the entire point of the format.
The chef arrives before anyone is awake
At Ocean Paradise the chef is contracted for ten hours a day and that is not an upgrade — it is in the rate, alongside an assistant on the same hours, waiting staff, and two housekeepers at eight hours each. He has already been to the market. By the time the first person comes down there is coffee, fruit, bread and eggs to order, and a conversation about lunch that takes ninety seconds because the preferences were taken three weeks ago. Nobody has to decide anything before coffee , which is a luxury that does not photograph and is the one guests mention most.
The villa manager, for eleven minutes
She confirms the boat for midday, moves dinner half an hour later because the group is slow this morning, reports that the pool was serviced at seven, and takes a request for a second sun umbrella. Then she goes. The measure of a good villa manager is how little of her you see , and how completely the things you mentioned once have already happened.
Down the cliff, and out to Formentera
Es Cubells sits on the stretch of south coast known as the golden mile, looking out over Las Salinas to Formentera — on a clear day you can see it from the terrace. Most houses here are on cliffs, which is why the rarest thing in Ibiza is a villa that reaches the water. The crossing is short and the September sea makes it worth doing properly: anchor off, swim, eat on board, come back when the light goes gold. In August this is a queue. In September it is an afternoon.
Back at the house, and the part nobody plans
The best hour of an Ibiza day is the one with nothing in it. Salt still on your skin, the pool warmer than the sea, the terrace in shade by now, and two hours before anyone needs to think about dinner. A villa earns its rate in this hour rather than at midday — which is why the houses with a serious pool, a proper shaded lounge and somewhere to be alone are worth the premium. The driver, and dinner inland at Santa Gertrudis
Not the coast, and not Ibiza Town. Santa Gertrudis sits in the middle of the island — a village square, galleries, a handful of very good restaurants and no sea view at all, which is exactly why the adult version of an Ibiza week ends up there. From Es Cubells it is a drive of similar order to Ibiza Town, which the villa’s own directions put at twenty-five minutes, and it is the single clearest signal that a group has stopped trying to be at the party and started trying to eat well.
The driver matters more than it sounds. The road up from Es Cubells is narrow and dark, nobody is counting glasses, and the car is outside when you decide to leave rather than twenty minutes after. At Ocean Paradise, vehicle access and use are included during the stay — the driver is the part to arrange.
Back on the terrace, and the choice
This is the hour that decides which Ibiza you are having. The clubs are running their closing weeks and are twenty-five minutes away; the driver is still on. Or the terrace is warm, the sea is black, and the kitchen has left something out. Both are correct. Es Cubells is a decision about distance
Being twenty to twenty-five minutes from Ibiza Town and the airport is the whole proposition and the whole trade-off. You get gated plots, long driveways, no passing traffic and a coastline that falls away below the terrace. You also need a car, or a driver, for everything — including dinner.
For guests to whom being unseen is the point, that is a feature. How far ahead to book a September week
Shorter than you would expect, and shorter than for any other month worth having. Guidance from our own reservation patterns rather than policy:
- Early September — still peak-adjacent. Three to five months for the best houses on the golden mile.
- Mid to late September — the window this piece is about. Six to ten weeks is realistic, and houses are released as August plans change.
- The boat and the driver — a week for the boat, days for the driver. Both go faster during the closing weeks.
- A specific restaurant table — days rather than weeks in September, but confirm the place is still open on your dates.
- Any of it in July or August — nine to twelve months, and Es Cubells is the first part of the island to go.
